Cabbage Soup with Ground Turkey

A hearty soup made with fresh cabbage

Ingredients

  • 1.75 lbs (794 g) ground turkey (7% fat)
  • 1 cup (260 g) yellow onion, diced
  • 2 cup (352 g) potatoes, cubed
  • 1 cup (335 g) carrots, diced
  • 1/2 cup (175 g) celery, diced
  • 3 cup (510 g) cabbage
  • 2 14.5 oz cans of diced tomatoes
  • 1 1/2 quarts water
  • 1 bay leaf
  • 1/2 tsp dried thyme
  • 1/4 tsp dried basil
  • 4 tsp kosher salt
  • 1/4 tsp ground black pepper
  • 1/4 cup whole grain medley rice

Directions

  1. Add everything except for the rice to a large stock pot or Dutch oven.
  2. Bring to a boil over high heat.
  3. Add the rice.
  4. Reduce heat to medium low and simmer for one hour.
