
This classic cabbage soup is perfect for a cold day.
Cabbage Soup

A hearty soup made with fresh cabbage
Ingredients
- 1.75 lbs (794 g) ground turkey (7% fat)
- 1 cup (260 g) yellow onion, diced
- 2 cup (352 g) potatoes, cubed
- 1 cup (335 g) carrots, diced
- 1/2 cup (175 g) celery, diced
- 3 cup (510 g) cabbage
- 2 14.5 oz cans of diced tomatoes
- 1 1/2 quarts water
- 1 bay leaf
- 1/2 tsp dried thyme
- 1/4 tsp dried basil
- 4 tsp kosher salt
- 1/4 tsp ground black pepper
- 1/4 cup whole grain medley rice
Directions
- Add everything except for the rice to a large stock pot or Dutch oven.
- Bring to a boil over high heat.
- Add the rice.
- Reduce heat to medium low and simmer for one hour.
